Recipies

White / Brown Bread

500g strong flour 5 - 7g dried yeast 1 teaspoon salt 2 teaspoon olive oil 280ml water mix well for 10 minutes then cover with damp cloth for minimum 1 hour. mix again for 2 to 3 minutes and leave to rest for at least 30 minutes before final mould. Bake at 200`c for about 30 minutes.

Pizza Base

Same recipe as above will do ,with or without yeast. cut up into 4 or 6 equal portions after mixing and leave to rest for 30 minutes before rolling out.  

Simple Short crust Pastry

200g  plain flour or all purpose flour Pinch of salt 110g butter, cubed or an equal mix of butter and lard 2-3 tbsp very cold water Place the flour, butter and salt into a large clean bowl. Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm. Add the water to the mixture and using a cold knife stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry. Wrap the dough in clingfilm / plastic wrap and chill for a minimum of 15 minutes and up to 30 minutes.

Rosemary & Olive oil Bread

Mix to a dough and leave for 1 hr add oil & rosemary and leave for 30min , divide and rest for 10mins, dock and sprinkle with polenta flour.
