is not associated with obesity.

Sourdough
Sourdough often has a lower glycemic index than that of other breads–meaning, it doesn’t
spike blood sugar as dramatically. This is because it depletes damaged starches within it, simply
by its fermentative nature.
Sourdough bread contains the bacteria Lactobacillus in a higher proportion to yeast than do
other breads. More Lactobacillus means higher production of lactic acid, which means less of the
potentially dangerous phytic acid. And what does that mean? More mineral availability and
easier digestion!
Breads, and particularly flatbreads, have been around for centuries. Flatbreads date back to the
Ancient Egyptians. Pita bread has been in existence for at least 12,000 years in Middle-Eastern
countries.
Bread was so important to the Egyptian way of life that it was used as a type of currency. Even
more interesting is the fact they revered it so much they would often place it in the tombs of their
dead.
